A pumpkin is a gourd-like squash native to North America. Pumpkin can be boiled, roasted, baked, and steamed, but the most common way to eat it is in pumpkin pie. The majority of those pies are made with canned pumpkin puree. Right now, canned pumpkin is on sale for $0.99 at the grocery store two blocks from my house. I've seen it in other grocery ads for $0.78.
But what are other things you can make with a can of pumpkin? I decided to find out.
Here are the recipes I am going to share with you this week.
The first two recipes are sweet, using traditional pumpkin pie spices.
The Pumpkin Shortbread Cookies are crispy with less fat than most shortbread recipes. The praline topping makes them reminiscent of pecan pie.
Pumpkin No-bake Cheesecake is similar to pumpkin pie, but with a lighter texture. The ginger snap crust adds a zing to the creamy texture of the cheesecake.
Finally, try the Savory Pumpkin Cheddar Soup. While usually associated with sweet desserts, the smooth, rich flavor of pumpkin serves well as a base for soup. The addition of celery, onion, herbs, hickory flavoring, and cheese gives it a rich, beer cheese soup taste.
