RECIPE: Spinach-Artichoke Lasagne (Vegetarian)

Best Blogger Tips I was hungry for the spinach lasagne at a nearby restaurant and made this up!  I hope you enjoy it!

Elle's Spinach-Artichoke Lasagne

*2 cups fresh spinach
*1/2 can artichokes
*1/4 c. shredded or grated parmesan cheese
*3 garlic cloves
*1 egg
*1 15 oz. pkg ricotta cheese
*1 8 oz. bag of shredded mozzerella cheese
*1 pkg. no boil lasagne noodles
*1 jar alfredo sauce

Directions:

1.  Combine spinach, artichokes, parmesan cheese, garlic, egg, ricotta cheese, and 1/2 bag of mozzerella cheese in food processor or Vita-Mix.  Process at low speed until all ingredients are chopped. 
2.  Layer alfredo sauce, then noodles, then spinach-artichoke mixture until all noodles and mixture are used. 
3.  Top with remaining alfredo sauce and remaining mozzerella cheese.  Bake at 350 F until done.
