Each of the women had a cottage cheese loaf recipe she would bring from time to time. This is one I have adapted as my own.

Cottage Cheese Loaf
Ingredients:
*24 oz. container of lowfat cottage cheese
*small onion, diced
*1/4 c. vegetable or canola oil
*4 eggs
*8 cups puffed rice (Rice Krispies)
*Non-stick cooking spray with flour
Directions:
1. Spray 9"x13" baking pan with cooking spray or grease and flour pan. Preheat oven to 350 F.
2. Add cottage cheese, onion, oil, eggs, and seasoning to high speed mixer or to large mixing bowl and mix well.
3. Add puffed rice and mix thoroughly.
4. Spread mixture into baking pan and bake uncovered for 1 hour.
Serves: 6-8
